Ingredients
  

  • 150 g (5.2 oz) beef – diced finely
  • 1 onion – diced
  • 2 carrots – diced
  • 400 g (14 oz) tin mixed beans – liquid drained
  • 200 g (7 oz) tinned diced tomatoes (half a 400g (14oz) tin)
  • 1 teaspoon cumin
  • ½ teaspoon garam marsala
  • 1 teaspoon chili paste (sambal oelek)
  • ¼ cup water
  • oil for cooking
  • brown rice to serve – 1/2 cup per serving

Instructions
 

  • Heat oil in a pan over high heat
  • Add beef, ½ teaspoon chili and ½ teaspoon cumin, fry for 1 minute then set aside in a bowl. It will looked a little uncooked, that’s fine.
  • Add a bit more oil to the pan, add onions and carrots and saute until onions are browning
  • Add the beans to the pan, along with the remaining spices (1/2 teaspoon chili, ½ teaspoon cumin, ½ teaspoon garam marsala
  • Stir to combine, then add the tomatoes to the pan, stir and let simmer for a couple of minutes
  • Add water if it is too dry and trun the heat down while simmering for 2-3 minutes
  • Before serving add the beef back into the pan
  • Serve over brown rice or a bed of lettuce if prefered

If you want to cut the carb load just a little, simply exclude the brown rice and eat by loading the beef chili on top of lettuce leaves, into lettuce cups, or serve with some steamed green vegetables.
